To make one cup of sour milk for baking, use one cup of whole milk and mix it with one tablespoon of lemon juice OR vinegar; both will add acid to milk that sour milk needs. However, stir them well together and let them sit for 20 minutes; when it becomes sour, it is ready to use for baking.
