2. Separate 2 eggs into whites and yolks. Add the egg whites into the butter-sugar mixture, stir until smoothly combined. Reserve the egg yolks for later.
3. Combine all dry ingredients: sorghum flour, almond flour, baking powder, baking soda, salt and tapioca starch, together in another mixing bowl.
4. Gently mix dry ingredients into wet ingredients to form a dough. If the dough is too soft to work with, chill in the fridge for about 30 minutes.
