3. Stir in the cheese until and stir until smooth. Remove from heat. The sauce will thicken as it cools.
4. Add 2-3 teaspoons hot sauce depending on heat preference. You can also add cayenne pepper to take up the heat. Season with salt and pepper, to taste (I start with 1/4 teaspoon salt and 1/8 teaspoon pepper). If it's too thick add a Tablespoon or two more of warm milk.
