I'd like to share this simple, gluten free recipe for Soft Amaretti Cookies with all of you. Preheat oven to 325° F. Position rack in the center. Line large baking sheet with parchment paper. In a large bowl, whisk almond flour and sugar together. Add grated lemon zest and whisk a few more times. Set aside.
Traditionally flavoured with Amaretto liquor (hence the name) I have used sugar-free almond extract instead. These chewy biscuits are almost keto naturally and really only require the substitution of a quality low-carb sweetener for the sugar.
The soft version is also known as amaretti morbidi. They are very chewy. The crispy type is made the same way but held in the oven longer to obtain a crunchier texture. This is a quick rundown. For the full recipe, scroll down to the printable recipe card.
Then you need an egg white, almonds, amaretto liqueur, almond extract and sweetener. Actually, you don’t ‘need’ amaretto liqueur, but it does impart a stronger flavour to the biscuits, so I recommend it. I know it’s expensive, especially if all you can get is the well known brand Amaretto di Saronno.
