1. Cut the green tops off all the peppers. Discard tops and set peppers aside.
2. Slightly smash each clove of garlic just enough that the paper loosens; remove the paper and discard it.
3. In a medium, non-reactive (i.e. stainless steel, ceramic, or glass) pot, add the prepared peppers and garlic cloves. Pour in the vinegar and lime juice then add the salt, paprika, and bay leaf. Stir together to mix in the salt and paprika.
4. Bring the mixture to a boil. Reduce heat to medium-low, cover, and allow to simmer for 20 to 30 minutes or until the peppers are soft.

2. Preheat oven to 375°F. Brush the peppers on all sides with olive oil. Season generously with salt & pepper. Place in the oven on a rimmed baking sheet. Rotate until charred on all sides, about 20 minutes.
3. Empty contents of a can of chipotles in adobo sauce into a food processor and blend until smooth. Chile puree can be covered and stored in the refrigerator for up to one month because of the vinegar in the adobo sauce.
4. Depending on the amount needed, remove one or more peppers from a can of chipotles in adobo sauce. Carefully open and scrape seeds from pepper. Check for and remove any residual skin left on the pepper. Mash the pepper with a fork until pureed.
