1. Rinse the oxtail to remove any cartilage shards/debris and pat dry.
2. Place the oxtail, diced onions, minced garlic, tomato and water (about 4 cups or just to cover meat) in the slow cooker. Add the bay leaf, pepper, thyme, salt, Worcestershire sauce, and tomato paste. Stir gently to combine.
3. Cover and turn to low. Cook at low for 4 hours.
4. After 4 hours of cooking on low, open the slow cooker and add the cubed carrots, daikon, and potatoes. Quickly recover and cook on low for 2 more hours.

1. Season oxtail with salt and pepper. Set aside.
2. In a large cast-iron or saucepan, heat oil (about 2-3 tablespoons) over medium heat, until hot. If using a cast-iron, only use about a tablespoon of oil. Add the oxtail and sauté stirring frequently any browned bits off the bottom of the pot until oxtail is brown. Drain oil if necessary (leave about 1-2 tablespoons).
3. Add onions, green onions, garlic, thyme, allspice, Worcestershire, smoked paprika, and stir for about a minute. Throw in scotch bonnet pepper, tomato paste, bouillon, curry powder, and stir for another minute.
4. Then add to crockpot/slow cooker, together with carrots, beans, and potatoes.
