2. Add carrots, celery, mushrooms, potatoes, tomato paste, beef broth, beer, Worcestershire sauce, rosemary, salt, and pepper; stir to combine and close slow cooker.
3. Cook on High for 7 hours. Add peas and cook an additional 15 minutes. Season with salt and pepper.

3. Transfer to the slow cooker. Add the chopped tomatoes, potatoes or swede, aubergine and stock. Stir in seasoning and bay leaves. Cover and cook on low for 8-10 hours, stirring halfway through if you can remember.
4. Discard the bay leaves, taste and check the seasoning. Garnish with plenty of chopped parsley and lemon zest and serve with my crusty bread and a bold red wine.

3. Stir to coat the vegetables in the flour then add the wine and some stock, if necessary. Allow to simmer until the wine reduces.
4. Add the lamb and Guinness to the pot and stir to combine with the vegetables. If necessary, top up with stock to ensure the meat is covered in liquid.
