In the case of scalloped corn specifically, it’s basically like a creamed corn recipe, dressed up and made into a casserole. Cream, butter, eggs, crackers, and cheese are added to corn and it’s all baked together in a casserole dish.
Preheat the oven to 350 degrees F (175 degrees C). Butter an 8x11x2-inch casserole dish. Combine creamed corn, 1/2 cup cracker crumbs, 1/4 cup melted butter, and eggs in a large bowl; mix well. Pour mixture into the prepared dish. Mix remaining 1/2 cup cracker crumbs and remaining 1/4 cup melted butter with paprika and pepper in a small bowl.
Mix the corn, eggs, milk, salt& pepper in a casserole dish. Mix in half of the soda cracker crumbs. Mix the remaining crumbs with the butter and sprinkle on top of the corn. Bake uncovered in 325F oven for about 1 hour.
I also like to sprinkle some extra cheese over the top of the corn in the last 15 minutes of baking – the cornflakes will be nice and crunchy, and a little melted cheese takes the flavor over the top!
