1. Cook the cauliflower rice according to the package instructions. Once cool, press between paper towels to dry and remove excess water. You want to the cauliflower rice to be dry, so your final dish is not watery. Set cauliflower rice aside.
2. Heat a large skillet over medium high heat and add sausage. Cook sausage till golden brown; remove from pan. Add celery, onion, bell pepper and ½ tsp of salt to the pan and cook for 5-7 minutes or until onion is translucent and veggies are tender. Add garlic and cook for another 1-2 minutes, stirring constantly.
3. Lower the heat to medium and return the sausage to the pan. Add tomatoes, thyme, Cajun-All, paprika and the dry cauliflower rice and stir to combine. Add the shrimp to the veggies and sausage and cook until the shrimp are done, stirring often, about 5 minutes. Add the cream and gently stir to combine. Top with chopped green onions and chopped parsley and enjoy!

1. In a large wide pot (I used a 5-qt braiser, but you can also use a big soup pot), heat the oil over medium to medium high heat. Add the onions, peppers, and celery, and season with 1/2 tsp salt and 1/4 tsp pepper. Cook for 7-8 minutes, until slightly softened.
2. Add the sausage, paprika, cayenne, and oregano, and continue cooking for 5 minutes, until the fat and flavor from the sausage have rendered out and further softened the vegetables.
3. Add the garlic and stir for 30 seconds, then add the rice. Stir continuously for 3 minutes to toast the rice.
4. Add the chicken stock, 1 cup of water, tomatoes, and bay leaf, bring the liquid to a boil, then reduce to a simmer over low heat.

3. Meanwhile, heat remaining 2 tablespoons oil in a large skillet or saute pan over medium-high heat. Add the onion, reduce heat to medium and cook 4 - 5 minutes. Add the celery and red bell pepper and continue cooking another 7 - 8 minutes or until very soft. Keep heat at medium.
