DirectionsStep1Combine dry active yeast, honey and 1/4 cup lukewarm water in a large stand mixer bowl. Place the dough into the bowl, cover with plastic wrap and allow to rise for 1 1⁄2 hours in a warm place.Step8When risen, scrape the dough out onto a lightly oiled surface.Step9Cut the dough in half.Step10Flatten each half into a long rectangle then roll up like a Swiss roll. You'll have two fat logs of dough.Step11Take one log and with the palms of your hands, roll the dough into a long rope 24 inches (about 60 cm) long.Step12Tightly begin coiling the ends in opposite directions like an "S". Continue to coil both ends back towards the middle until completely coiled.Step13Repeat with the remaining dough.Step14Carefully transfer the coiled onto the baking sheet lined with non stick parchment paperStep15Brush with water and sprinkle thickly with sesame seeds. Pat the sesame seeds on so they stick well.Step16Cover the dough loosely with plastic wrap and allow to rise in a warm spot for 30-40 minutes until puffed and risen or doubled in size.Step17In the meantime preheat the oven to 400oF/200oC and place a deep baking pan inside the oven underneath the rack that you will be baking the bread on.Step18When the dough is puffed and risen transfer it to the oven. At the same time, carefully pour one cup of water into the preheated baking pan.Step19Bake for 15 minutes then remove the baking pan of water after 15 minutes.     1. In a large glass measuring cup, dissolve the sugar and yeast in 2 cups of the warm water. Let stand, covered for 5 minutes, or until foamy.
    2. Add 2 cups of flour and salt to the bowl of a stand mixer fitted with a dough hook. Add the yeast mixture and mix until a dough starts to form. Add 2 more cups of flour and let mix until a smooth ball of dough is formed. It too wet, add 1 -2 tablespoons more flour. Do not let the dough get to dry. It should be slightly sticky. Let knead for about 5-10 minutes in total.
    3. Place the dough in a large oiled bowl and cover with plastic wrap. Let it rise until doubled about 2 hours. (I usually place in my oven with the light on).
    4. On a floured board, punch down the dough, divide it in half and shape two thick loaves or four baguettes.
