1. Start by browning the ground sausage in a large skillet over medium-high heat. Break the sausage into small pieces as it browns.
2. When the meat is cooked through, add the butter and almond flour to the pan and whisk it.
3. Add the heavy cream and whisk constantly until well combined. Season with salt and pepper, to taste. Turn the heat down to medium low, add the water as needed to thin out the gravy, and whisk. Simmer for 3-5 minutes, until thickened.

1. Heat a large skillet over medium high heat. When skillet is hot, add the sausage, breaking into small chunks with a spoon.
2. Cook sausage over medium high heat until brown and cooked through. Drain off excess fat.
3. Place skillet with the sausage over medium low heat. Sprinkle xanthan gum on top and stir in. Stir in sage and red pepper flakes.
4. Gradually add the chicken stock, a few tablespoons at a time, stirring between additions.

5. Make almond flour biscuits according to instructions here.
6. Meanwhile, in a large skillet over medium-high heat, brown the sausage for 8-10 minutes, until cooked through. Drain any fat from the pan.

1. Pre-heat ove to 400F. Line a baking pan with parchment, a silicone baking mat, or spray with cooking spray. Add all of the biscuit ingredients to a large bowl and stir to combine. Scoop the batter using a 3 tbsp scoop or spoon out 3 tabelspoons worth of batter for each biscuit. Place them 2 inches apart on the baking sheet. Makes 6 biscuits.
2. Bake in the oven for 15 minutes or until golden brown. Remove and set aside.
3. While the biscuits are cooking, make the gravy. In a large skillet, brown and crumble the sausage over medium-high heat until it is cooked through. Add the chicken broth, cream, and xanthan gum. Stir to combine. Bring to a simmer, reduce the heat to low, and continue to simmer until the gravy is thick. Season with salt and pepper. Remove from heat.
4. To serve, cut the biscuits in half and spoon gravy onto biscuits. Store any leftovers in an airtight container in the refrigerator.
