4. When the internal temperature at the thickest part of the roast reaches 125-135°F, remove it from the grill and place in a rimmed dish. Cover with foil and let it rest 20 minutes, until the internal temperature reaches 145°F for medium rare.

Wearing gloves if you have them, rub paste over entire surface of roast, pressing into meat to adhere. If you have a leave-in probe thermometer, insert so tip of probe is in center of roast (the thermometer sensor is in the tip). Set roast, fat side up, on wire rack and roast meat until probe thermometer or an instant-read thermometer registers 118° for medium-rare, 3–4 hours. Let cool 45 minutes; internal temperature will rise to 130°.
4. Increase oven temperature to 475°. Return meat to oven and roast until fat is browned, 10–15 minutes.

4. Add the rack to the slow cooker and change the setting to BAKE/ DRY and cook at 350 Degrees for one hour. Once finished, remove from slow cooker and place on cutting board covered with aluminum foil. DO NOT CUT THE PRIME RIB RIGHT AWAY. Allow resting for about 10-15 minutes before carving.
