1. Preheat the oven to 350 degrees F.Line a few baking sheets with parchment paper or a silicone baking mat.In a large bowl or stand mixer, beat 1 cup butter until light and fluffy, 2 minutes or so, scraping the edges.
2. If you have a mixer that is powerful enough, start with cold butter, otherwise you will have to let it soften a bit.Add 1/2 cup granulated sugar and 1 cup brown sugar and beat 1 more minute, scraping bottom and sides.Add 2 eggs and 1 tablespoon vanilla and beat well, scraping the edges and bottom of the bowl.Add 2 cups flour (spooned and leveled!), but do not mix it yet.
3. Add 1 cup cocoa powder (if your cocoa looks clumpy, sift it into the bowl through a strainer.
4. You don't want chunks of cocoa in your cookies.) Don't stir yet.Add 1 teaspoon baking soda and 3/4 teaspoon salt.

1. Place melted butter in the bowl of a stand mixer fitted with the paddle attachment (or a large bowl if using a hand mixer). Add granulated and brown sugars and mix on low speed until the mixture is smooth. Mix in egg and vanilla extract and mix on medium speed until combined.

3. Spray mini muffin pans with nonstick cookie spray (I like the kind with flour for these). Scoop 1-1 1/2 tablespoons of dough into each cavity. Chill the pans for 20 minutes.
4. Preheat oven to 350°F. Bake cookie cups for about 9-11 minutes (the outside will start to turn a golden color when done).
