3. Bake for 35-45 minutes or until the chicken is 160 degrees when checked with a meat thermometer.
4. Carefully pour the cooking liquid into a small saucepan. Add the salt, pepper, and rosemary. Sprinkle with the xanthan gum. Cook over medium heat, whisking, until it has thickened. Season with additional salt and pepper if desired. Serve with the rosemary chicken.

Don't forget to tuck the wing tips under themselves so they don't burn.
4. Roast the chicken with the feet towards the back of the oven, until the juices run clear, and internal temperature is 160°F, about 50-60 minutes (Insert thermometer between the thickest part of the leg and the thigh).
