I usually make Beef Rissoles but you can make these with lamb, pork, chicken or turkey. We can never have too many beef mince recipes! Rissoles are a classic we’ll love forever, along with Spaghetti Bolognese, Tacos , Meatloaf , Beef Hamburgers and cosy Cottage Pie.
When you form the patties make sure to press them well, so that the rissoles will keep together even without the use of breadcrumbs. If you still feel that the mixture is too wet, you can use oatmeal as a substitute for breadcrumbs. You can even blitz them quickly in a mini blender to avoid coming across big flakes in the cooked chicken rissoles.
Panko breadcrumbs – Japanese breadcrumb favoured for the extra-crispy coating it gives crumbed foods, and makes the inside of things like rissoles softer compared to using finer regular breadcrumbs. Find it in the Asian aisle of most large supermarkets. Substitute with 2/3 cup regular breadcrumbs if you can’t find it.
