1. Cook the pasta in salted boiling water until al dente.
2. Meanwhile, cut the pancetta into lardons (little chunky strips about 6mm wide).
3. Heat a large frying pan over a medium-high heat, add the oil and pancetta. Stir until golden.
4. Add the garlic and parsley, heat for a few more seconds then remove from the heat.

5. Put the coriander seeds, cumin seeds, mustard seeds and fennel seeds into a spice grinder and grind to a powder.
6. Heat the oil in a sturdy wok over a medium heat, add the cumin seeds and fry for 30 seconds until they begin to pop, then stir in the onion and serrano pepper and fry for 3 minutes. Stir frequently so it doesn't burn.
