Total Time: 30 minsCategory: DrinksCalories: 112 per serving1. Place your washed fresh redcurrants into your bucket, add in the water and the citric acid. Mix the whole content well with a spoon. Close with the lid and let it stand for two days. During the two days, mix occasionally with the spoon for a minute and always close the bucket with the lid.
2. Two days later, the berries will have lost some of their gorgeous red colors. At this point add in the sugar and the sorbic. Mix the whole content well again so that the sugar is well dissolved.
3. Then (same day or next day) prepare your sieve, funnel, and bottle as shown and pour/press the berries into the sieve so that the syrup falls into the bottle. Do this with the whole content of the bucket and discard the berries afterward. Seal the bottles well and store in a cool and dry place.

2. Strain the juice through a fine mesh strainer into a saucepan. Press the mixture and move it around with a rubber spatula to get all of the juice through.

Frequently Asked Questions

How to make red currant syrup?

Method Remove the red currants from their stem by using a fork. Muddle the currants in a pan to get the juices out. Add all the ingredients and bring to a boil. Let simmer for another 10 minutes until all the sugar is dissolved and the juices are released from the berries. The recipe I’ve used yields 420 ml of unstrained red currant syrup

How do you cook red currants?

Heat the sugar in the oven, and put on the juice to boil. When it has boiled fast for twenty minutes, add the sugar; stir well, until it is dissolved; boil up for a minute, and pour into heated glasses. I mashed my red currants with a potato masher and let them drain for a couple of hours.

How do you make currant juice?

The currants must be picked free of leaves, etc., but need not be stalked. Wash and drain them, and place in a jar in a pan of hot water. Heat the fruit thoroughly, and mash it with a heavy wooden spoon or pestle. Place it in a jelly-bag, and let drip all night. The following day, measure the juice; allow one pound of sugar to every pint.

What do red currants taste like?

Currants have a lot of seeds, so I realized a syrup made with the Currant juice was the better bet! Red Currants have a wonderful tart and refreshing flavor. They taste kind of like a cross between a raspberry and a green grape.
