  • WebDec 13, 2023 · Step six: And then bake in a 425 F oven. After 20 minutes, rotate the sheet pan if need be, and spoon little of the pan sauce over …

    1. Preheat oven to 425F
    2. Make the Szechuan marinade by stirring all ingredients together in a medium bowl. Pour half of the marinade over the chicken, either in a bowl or zip lock bag. Let chicken marinate while you prep the brussel sprouts, or marinate overnight (for even more flavor!)
    3. Cut the brussels sprouts in half. The brussels sprouts pictured here are ping-pong ball sized, so depending on size, you may need to quarter, or leave them whole. If using very very small brussel sprouts, leave them whole. If extra- large, like a golf ball, then quarter.
    4. Place brussel sprouts in a bowl and pour the remaining marinade over brussel sprouts and toss. Add a few dried chilies if you like ( just for looks) and spread them out on a large, parchment or foil-lined sheet pan. Nestle the chicken thighs (or tofu) in between, and spoon any remaining marinade over the chicken. ***Season the chicken or tofu with a little salt (especially if not marinating overnight!).

    1. Combine chicken, soy sauce (or tamari), Shaoxing (or sherry), chiles, cumin seeds, garlic, ginger and sugar in a 4- to 7-quart slow cooker. Tie star anise, cinnamon sticks and 1 teaspoon Sichuan peppercorns in cheesecloth or a muslin spice bag and add to the slow cooker. Add water and cover. Cook on Low for 8 hours or High for 4 hours.
    2. To prepare bok choy: About 15 minutes before serving, trim bok choy and separate leaves. Bring 1 inch of water to a boil in a large saucepan fitted with a steamer basket. Add the bok choy; steam until just tender, 8 to 10 minutes. Top with sesame oil, sesame seeds and salt.
    3. To finish the chicken: Remove and discard the spice bag. Use a slotted spoon to remove the chicken. Discard the skin and bones. Pour the broth into a fat separator or skim the fat, if desired. Stir in the remaining 1/2 teaspoon Sichuan peppercorns and let stand for 5 minutes.
    4. Divide the chicken and broth among 6 serving bowls and top with scallions and crushed red pepper. Serve with the bok choy.
