3. Mix together the white cooking wine and other 2 tablespoons of melted butter in a separate bowl. Dip and soak each piece of fish in the wine mixture, and place on a baking sheet.
4. Add salt and pepper to taste to both sides of the fish.

1. In a large saute pan, heat up the olive oil to medium high. Sprinkle salt and pepper over the cod filets then brown them in the skillet on both sides. About a minute or two just to give them color.
2. Take out the cod and set aside. Turn the heat down to medium and add in the broth, tomato paste and anchovy paste. Whisk to combine and then add the garlic, tomatoes and olives.
3. Simmer for 5 minutes, then add in the cod, cover and cook for 5 minutes or until the cod is cooked.
4. Serve as is, or over cauliflower rice or zucchini noodles.
