Then you can tilt the pan back down. Cover the skillet with a fitting lid. Turn the heat down to low if necessary to prevent burning. Cook the egg to your desired doneness. For an egg with a runny yolk, cook for approximately 1-2 minutes. Once the egg is cooked, how you like it, remove the lid.
3. Gently scoop around the crispy cheese shell very carefully. It is still hot at this point and will break easily. Remove the pan from the stove. Removing the egg and cheese from the heat source will allow the cheese to begin to firm up. Gently use a rubber spatula to get under the cheese and fold it over the egg into a taco shape. Then slide the shell and egg onto a plate.
4. Fill the taco with the diced jalapenos (if using), shredded cheese, thinly sliced avocados, and lettuce. Feel free to add other Keto-friendly toppings. Serve immediately!
