Transfer back to the pot and continue cooking over low heat, stirring frequently to prevent the bottom from burning, until the mixture thickens a bit, takes on a slightly darker color, and has a more concentrated apple flavor, about 15 minutes more.
3. Cool the apple butter to room temperature, transfer to an airtight container, and store in the fridge for up to 2 weeks.
