1. In a medium sized stock pot heat 2 quarts of fresh water over medium high heat.
2. When the water is near a simmer, turn the heat off. Add the 1 Cup of sugar and stir until sugar dissolves.
3. Place the tea bags into the water, place the lid on the saucepan. Allow to come to room temperature.
4. Remove the tea bags and gently squeeze to remove any remaining tea. Use care not to tear the tea bags. Discard tea bags.

1. Boil. Bring 1 quart of water to boil in a medium saucepan or tea kettle set over medium heat. Remove from the heat and add the tea bags. Allow to steep for about 15 minutes. Do not allow the tea to become cold.
2. Sweeten. In a gallon pitcher, add the sugar and pour in about 1/2 of the warm tea. Stir to dissolve the sugar. Pour in the remainder of the brewed tea, being careful not to drop in tea bags.
3. Stir. Add baking soda and stir to combine. If serving immediately baking soda may not be needed.
4. Serve. Fill the pitcher with cold water and serve over ice. Great with a wedge of lemon, lime, orange or a sprig of mint.
