DirectionsStep1Grease a small pan with butter or coconut oil and line it with parchment paper. I use one of these 6x6 inch pans because I like my caramels to be thick, but you could use a bread pan or something similar.Step2Add the cream and rapadura sugar to a medium-size pot. The mixture will bubble up quite a bit so make sure there is a lot of room at the top. If possible, clip your thermometer to the side of the pot, like is p…Step3Bring the mixture to a boil on the stovetop and then reduce to medium heat - I set my stove to just a little over the exact medium mark. Stir often, then when the mixture reaches 225°F stir constantly until it reach…Step4When the caramel reaches 240°F, quickly pour it into your prepared pan and allow to cool to room temperature. Once the caramel is room temperature, pop it in the freezer for about five minutes to make it easier to cut.Step5To cut, score the top with squares to make it easy to figure out exactly where to place your knife.Step6Next, fill a jar with hot water and place the knife inside - I use a butcher knife. Once the knife has warmed for about fifteen seconds, remove and dry it, then run it through a stick of butter (or some coconut oil) to grease b…Step7Wrap in parchment paper before storing. I store my caramel candy at room temperature if they'll be eaten within a few days. For longer-term storage I keep them in the fridgeIngredientsIngredients2 cupsHeavy Whipping Cream2 cupsSucanat (aka rapadura sugar)add Butter (or coconut oil, for greasing your pan and the cutting knife)NutritionalNutritional298 Calories25 gTotal Fat92 mgCholesterol20 gCarbohydrate25 mgSodium2 gProteinFrom mommypotamus.comRecipeDirectionsIngredientsNutritionalExplore furtherChewy Salted Caramel Recipe Without Corn Syrup - No …nofrillskitchen.comArtisan Caramels (NO CORN SYRUP) – Busy in Brooklynbusyinbrooklyn.comSoft Chewy Caramels Recipe: How to Make It - Taste Of …tasteofhome.comHow Do I Make Soft Caramels Without Corn Syrup? 1. Butter a 9x13" baking dish and set aside.
    2. Combine the sugar, Karo syrup and salt in a large pot over medium-high heat. Stir until the sugar has dissolved and started to bubble. Slowly stir in the cream. Don’t let it stop boiling and keep stirring. Next, stir in the butter. Keep the mixture at a boil and stir constantly, about 15 to 20 minutes. When the temperature has reached 245°F (firm ball) stir in the vanilla. Remove from heat and pour into the dish.
    3. Let sit on the counter until it has hardened. Usually, I will make in the evening and let sit overnight. Once the caramel has hardened, use a buttered or plastic knife to cut into rectangles. Cut into 12 vertical rows and then cut 4 caramels from each row. Cut wax paper into 3x6-inch squares and then wrap the caramel inside.
    4. Caramels will stay soft for 2 to 3 weeks.

    1. Line the baking dish with parchment paper, leaving enough hanging over two opposite sides to easily lift the cooled caramels out of the pan. Liberally grease the parchment with butter or cooking spray.
    2. Combine the white sugar, brown sugar, corn syrup, heavy cream and butter in a 6-quart dutch oven or other heavy bottomed pot. Heat over medium heat and stir constantly until all ingredients are melted and blended together.
    3. Affix a candy thermometer to the side of the pot, roughly 1" above the bottom of the pot. Postion the thermometer so that it's submerged below the surface of the caramels throughout the cooking process. Increase the heat to high and bring the sugar mixture to a boil.
    4. Once boiling, reduce the heat to medium low and let the sugar mixture simmer with slow, medium-sized bubbles until the candy thermometer reaches 245-250°F. Stir every 10 minutes. It will take 40-45 minutes to reach the correct temperature. NOTE: watch the thermometer carefully after it reaches 230°F, as the temperature increases pretty quickly after that point.
