3. Heat the oil in a 4 quart Dutch oven or stock pot over medium heat until shimmering. Add the onions and saute until they're soft and transparent. Sprinkle the cinnamon, curry powder, ginger, and salt over the onions, and stir for a minute or two to bloom the spices.

When the soup is hot, use an immersion blender to make the soup smooth. You can use a blender to make the soup if desired. Add cream to the soup, and stir the cream.
4. Toast the pumpkin seeds in a small skillet. Heat through until they become fragrant. Remove from heat immediately.
