Turn off the heat and set aside to cool. In a mixing bowl, add the egg yolk and erythritol and whisk until the mixture is pale.
Step 1: Begin by pouring 1/4 cup heavy cream into a small bowl. Gently sprinkle the gelatin powder on top, and whisk together immediately. Set aside. This is the secret that makes this low carb chocolate pudding ultra thick and decadent. (If you need a different keto friendly thickener, try this list of cornstarch substitutes for ideas.)

The texture of this keto mousse low carb pudding is like a cloud of frosting because it is so light and fluffy. But only it is less sweet and more even more fluffy. Best of all this “keto mousse” is SO easy, and you can use any flavor of pudding. Keto Chocolate Mousse is my favorite, but they're all good!
