These pickled green tomatoes work best with small, firm tomatoes, not ones that are large and juicy. The firmer the fruit going into the pickle, the firmer the end product. The recipe isn't meant for tomatoes that are green when ripe. I'm sure you could still turn those into green tomato pickles, too, but they would be soft and mushy.
To make low carb fried green tomatoes, first slice your green tomatoes into half-inch thick rounds. Next, follow a standard breading procedure: Dredge the slices in the protein powder/oat fiber combination. Remove excess. Dip each round into the egg mixture to coat, then into the keto breadcrumb mixture.
Remove any green stems from the tomatoes, then clean and dry them thoroughly. For cherry tomatoes, slice them into halves or quarters. For "hamburger pickle slices" using small standard tomatoes, slice off the stem end, them slice them into 1/8" thick slices horizontally (i.e., between the stem and blossom ends).
A quick pickle recipe is a pickling recipe that involves a brine mixture usually consisting of salt, vinegar, and sugar but does not involve canning. Quick pickles recipes usually only take about 24-hours and are very simple to make. A detailed list of ingredients is included within the recipe card at the end of this post.
