I often just make a sugar free blueberry syrup that I’ll use over low carb waffles or pancakes. I also pour this blueberry sauce over low carb ice cream and mix it into plain high fat yogurt.
This blueberry buckle is a fluffy almond flour coffee cake studded with fresh blueberries. The streusel topping gives the cake just a little bit of sweet crunch. It’s perfect for brunch or dessert.
Squeeze the juice of half a lemon over the top if desired. Bake for about 40 minutes. You want the cobbler crust to be a golden brown and some of the blueberries will burst creating a gorgeous color. I call this Keto blueberry cobbler with Carbquik a dessert because that is the way that I first prepared it.
