1. Rinse fish filets and pat dry with a paper towel. Season on both sides with salt & pepper
2. Lay out 3 plates or shallow dishes. Place the flour on the first dish. Crack the egg onto the second dish and use a fork to gently beat it. Pour the breadcrumbs on the third plate.
3. Season the flour and bread crumbs with a pinch of salt and a few twists of black pepper each.
4. Lay the first filet on the flour and press on all sides to fully coat all the nooks & crannies. Shake off excess flour.

4. Carefully place the fillets in the pan (work in batches if necessary). Cook until bottom is golden brown and crisp, 3-4 minutes.
