2. Transfer to a bowl to cool. Now add the dried pomegranateseeds, dried chillies, ajwain, fenugreek seeds, cardamom seeds, black peppercorns, cinnamon and cloves to the pan and toast lightly for about aminute but again, not yet smoking.
3. Transfer to the pan with the cumin and coriander. Oncecooled, place in a spice grinder with the remaining ingredients and grind to a fine powder. Store in an air-tight container and use as required.
