4. In the same pan, heat the second TBSP of olive oil. Add in the wax peppers and a pinch of salt. Cover the pan. Cook for 4-5 minutes or until lightly browned and softened just a bit. Add the cooked peppers to the blender.

In a small bowl, add the ingredients for the sauce and mix with a fork or spoon. Pour over the ribs. Cook Ribs on low over night. Remove the pork from the crockpot and shred with a fork, removing and discarding any bones or large pieces of fat. Pour the sauce from the crockpot over the pork and mix it in, gently. In a small bowl, add the vinegar dressing. Mix and then pour 1/2 of it over the pork and mix. If the pork is not moist enough add more vinegar dressing. Mix again to distribute the dressing.
2. To make the Sesame Slaw: Mix the ingredients for the Sesame Slaw dressing. Taste for sweetness and adjust. Pour half over the angel hair slaw and stir to evenly distribute the sesame dressing. Pour in more as you like, being sure to stir thoroughly.
3. To make the Green Apple Salsa: Cut the apple into thin matchsticks about 1/2 - 1 inch long. Very thinly slice the scallion on the bias all the way up to the green stalk just before it becomes hollow. Chop about 1 tablespoon of cilantro or more if you want. Mix the green apple, cilantro and scallion together in a small bowl. Squeeze the juice from 1/2 of a lime over the green apple and scallions. Mix.
4. To assemble the soft tacos: Place a tortilla on a plate. Put a small amount (about 2-3 tablespoons) of the Sesame Slaw in the middle of the tortilla. Put some Pulled Pork on top of the sesame slaw and garnish the pork with the green apple salsa.
