1. Prepare Pressure Cooker: Heat up your pressure cooker (Instant Pot: press Sauté button and click adjust button to go to Sauté More function). Make sure your pot is as hot as it can be (Instant Pot: wait until indicator says HOT).
2. Brown Pork Shoulder: Generously season the pork shoulder with kosher salt & ground black pepper. Add 1 tbsp (15ml) of peanut oil in the pot. Ensure to coat oil over whole bottom of the pot. Add in the seasoned pork shoulder, then let it brown for exactly 6 minutes on each side (don’t need to keep flipping the meat). Remove and set aside to rest for 5 minutes on a chopping board.
3. Create Chicken Stock Mixture: While the pork shoulder is browning in the pressure cooker, mix 1 tbsp (15g) Dijon mustard, 1 tbsp (15ml) Worcestershire sauce, 1 tbsp (15ml) regular soy sauce, ¼ cup (63ml) maple syrup, and 1/3 cup (83ml) unsalted chicken stock in a large glass measuring cup.
4. Sauté Onions & Garlic: If necessary, pour another tbsp (15ml) of peanut oil in your pressure cooker. Add in the sliced onions and sauté for 1 – 2 minutes. Season with a pinch of kosher salt and ground black pepper. Add in the minced garlic and sauté until fragrant (about 30 seconds).

1. Quarter the pulled pork shoulder (working around the bone as best you can). Score the fatty layer with your knife. If you cut into the meat, don't worry about it! Liberally apply salt and pepper to all sides of each quarter.
2. Warm your pressure cooker over high heat. Add in the bacon fat or other cooking oil. When it is shimmering in the pan, add in the first quarter of shoulder, fat side down. Brown nicely for about 2 minutes. If you want, brown the other sides as well. Remove from the pan and set aside when browned. Repeat with the remaining pieces.
3. Turn the heat down to medium-high and add in the sliced onion with a pinch of kosher salt. The onion will start to release its liquid and deglaze the bottom of the pan. Cook, stirring well, for five to six minutes. Add in the garlic and cook for 2 minutes more.
4. Turn the heat back to high. Add in the stock and fully deglaze the bottom of the pan, scraping up any browned bits. Add the pork back in and secure the lid of the pressure cooker. When the pressure has built (on mine a little yellow button pops up), turn the heat down gradually until it continues to hold the pressure.
