Add avocado oil and let it get hot.* Add potatoes with a little more salt and pepper and cook for 10-15 minutes until browned and almost cooked through. I covered them with a lid and added a little water every so often to the pan to help speed up the process. When the potatoes are geting close to being done, add onion and saute for another 5 minutes.
3. Add the peppers with the Italian seasoning and saute for 5-7 minutes until softened. Add the pork back in with the pasta sauce and mix well to combine. Let everything warm through, about 1-2 minutes. Top with the shredded cheese let it melt, about 1-2 minutes. Top with fresh herbs if using and enjoy!
