1. Put all of the marinade ingredients in a bowl and mix well.
2. Put the chicken in to a large bowl and add the marinade. Mix well. Put in the fridge for 30-60 minutes so the chicken marinates.
3. Put in a baking dish or onto a baking sheet.
4. Put in a preheated oven at 220°C/425°F/Gas 7 and bake for 40 minutes, or until the chicken is cooked through (reached an internal temperature of 74°C/165°F)

5. Prepare the marinade by mixing minced garlic, lemon juice, orange juice and olive oil together with a whisk. Add lemon zest, sea salt, sweet paprika, black pepper, red pepper flakes and dry oregano (or use Italian Seasoning instead). Whisk everything together.
6. Pre-heat the oven to 400ºF. Sprinkle paprika on top of the chicken skin (this will create a nice color on the skin).

1. Mix together all of the Peri Peri marinade ingredients (i.e. all the ingredients apart from the actual chicken!) in a large bowl. Place the chicken in the bowl, turning to coat each piece of chicken with marinade. (You can do this in a ziplock bag if you don’t like getting your hands messy!)
2. Cover and marinate the chicken for 2 hours in the fridge or up to 24 hours if you have the time. Alternatively, just continue with the recipe.
3. Heat your griddle/frying pan for 2 minutes over a high heat (see notes for alternative cooking methods). Place the chicken in the pan and cook for 7-9 minutes on each side (depending on thickness – you can check if your chicken is done by cutting into the thickest one – if it’s not raw and pink, you are good to go!).
4. Serve with all your favourite Nando’s style sides!
