Place the almond flour, psyllium, anise seeds and extract, and salt in a large mixing bowl. In another bowl, mix the eggs, coconut milk, sweetener and melted ghee. Add the dry ingredients into the bowl with the eggs and mix well. Pour the batter, about 1 tbsp (15 ml) per pizzelle so you can make 2 or 3 at once, in the cone maker and close the lid.
You will need a pizzelle iron, though. In a high-powered blender or with a hand-mixer, combine the eggs, sweetener, and almond extract. Blend a few seconds to combine. Once combined, add the almond flour, baking powder, and salt and blend for 30 seconds to combine. Place a walnut-sized amount of dough on pizzelle iron and press down.
Variations: You could try making vanilla pizzelle by adding extra vanilla and skipping the almond. Or, try using two teaspoons of lemon or orange extract in place of the almond/anise. Place the cookie sheets in the oven and let the pizzelle stay inside for 15 to 20 minutes to crisp up. Repeat with the remaining batter. Spread 1 keto pizzelle with about 1 ½ tablespoon of keto caramel sauce. Top with another pizzelle.
