These Pistachio Muffins have a really pronounced pistachio flavor and color, they should be light, airy, and super professional, not to mention tasty. In a large bowl add the oil and sugar. Stir. Add the eggs and almond extract. Beat lightly until evenly combined. Add the pudding mix, baking powder, baking soda, sour cream, salt and milk.
Combine the mascarpone, 1/2 cup of the heavy whipping cream, unsweetened almond milk and 2 packages pistachio pudding mix in a large bowl. Mix well and chill for 15 minutes.
