1. Sprinkle the gelatin into 1 cup water and allow it to bloom, which will take about 5 minutes.
2. Meanwhile, heat the cherry juice and sugar in a saucepan over a medium-high heat until the sugar has dissolved, about 2 minutes. Remove the pan from the heat and slowly whisk in the bloomed gelatin until completely dissolved. Add in the lime zest and juice, stirring to combine.
3. Spray an 8-by-8-inch baking dish lightly with cooking spray. Pour the mixture into the pan and transfer to the refrigerator. Chill for 2 hours.
4. Remove the pan from the fridge and tip the chilled gummy block onto a board. Cut into 1-inch cubes. Carefully remove the individual gummies onto a baking sheet and allow them to sit out overnight on the counter. This will help give them a more gummy texture. Pack into resealable bags or mason jars.

1. In a large pot (yes, a large stew pot, you'll need it!), stir together the gelatin and cold water. Let sit 5 minutes.
2. Meanwhile, let the additional water come to a boil in a small saucepan or in the microwave. Pour the boiling water over the gelatin mixture and stir until dissolved, about 1 minute. Stir in the sugar.
3. Place the pot over a burner at medium-high heat. Bring to a boil, then reduce heat to medium-low. Let simmer until the mixture reaches 240-255 degrees F, about 25 minutes, stirring constantly and scraping sides to avoid burning any sugar. The mixture will get quite thick.
4. Remove from heat and stir in the flavor extract of your choice. Next, add food coloring, or divide the mixture among bowls and add food coloring for multiple colors.
