As you can see from their mode of preparation, bulalo is much like nilaga but while the latter can be made with basically any cut of beef, pork or chicken, bulalo is specific in its use of beef shanks and beef marrow bones. Still, like nilaga, the glory of this boiled soup is its broth made rich by collagen-rich beef simmered for hours.
This is a recipe for Beef Bulalo or Boiled beef shank soup with corn and long green beans. Boil water in a pressure cooker. Add onions and whole peppercorn. Cook for 3 minutes. Add beef shank. Let boil. Add Knorr pork cube. Stir. Cover the pressure cooker. Pressure cook for 40 to 45 minutes. Remove the cover once pressure is out.
