1. Wash the jars and lids well in warm, soapy water and rinse thoroughly. Check the rims for nicks and cracks.
2. Rinse the chiles well under clean running water and air dry on a kitchen towel.
3. Add the vinegar, water, and garlic to a large saucepot. Bring to a boil over high heat, and then reduce heat to low and simmer for 5 minutes. Remove and discard the garlic. Keep warm.
4. Spread a kitchen towel on the counter. Remove the warm jars from canner using the jar lifter. Drain the water back into the canner and line up the jars on the towel.

2. If you will be water bath canning these pickled jalapenos, then prepare canner, jars, and lids. Wash your jars and lids. Sterilize your jars in a large pot filled with water. Bring the water to almost a simmer over medium heat. Keep the jars in the simmering water until you are ready to fill them. Use a jar lifter to remove them from the water when you are ready to fill them, dumping the hot water back into the pot when you remove each jar from the water. Right before you are ready to can, put your lids in a small pot or bowl with hot, but not boiling water. Put some additional white vinegar in a small bowl, alongside a clean washcloth or paper towel.
