1. Dry roast the spices - place the cumin, mustard seeds, coriander, and fennel seeds on low heat for 30 seconds to a minute. Stir often to prevent them from burning. Cool completely and place in a spice grinder and grind to a fine powder.
2. Combine the spices with the grated carrots. Add the turmeric, salt and lemon juice and stir well.
3. Optional: add your white vinegar. The vinegar serves as a preservative and helps retain color and freshness over time.
4. Serve as a side dish for lunch and dinner. Keep refrigerated when not in use. Use within 7 days.

1. Blanch the sliced onions and diced carrots in a small saucepan of boiling water for one minute.
2. Strain the vegetables into a colander and then return them back to the pan.
3. Add the white vinegar, sugar, crushed red chili flakes, pepper and salt. Then add just enough water to cover the vegetables. Bring the mixture to a boil and cook it for one minute.
4. Pour the pickled relish (with the liquid) into jars and let it cool completely before sealing the jars. The relish will keep for up to two weeks in the fridge.
