Philadelphia cheesecake does not contain any sour cream or heavy, which you find in New York cheesecake. French Style Cheesecake – In France, the classic cheesecake you find will not have any cream cheese but will have mascarpone, chevre, or Neufchatel cheese.
Be sure to use full fat cream cheese. For vegan keto cheesecake, choose a plant based cream cheese. I have not tried substituting low fat light cream cheese or Neufchâtel cheese so cannot personally recommend those.
If making a crust, simply mix together almond flour, cocoa, low carb sweetener, and butter then press into the bottom of the pan (photos 1-5). There’s no need to pre-bake the crust and it can be used un-baked as well for no-bake cheesecakes.
