1. In the bowl of an electric mixer fitted with a paddle attachment or in a large bowl with a hand mixer, add the sugar and meringue powder. Mix on low speed until combined.

The royal icing is ready when it holds a ribbon-like trail on the surface of the mixture for 5 seconds when you raise the paddle/s before disappearing back into the royal icing left inside the bowl. Add a teaspoon of water if the royal icing and resume mixing if it is overly thick.
