This video shows you how to make traditional penne with vodka sauce. Pancetta is sautéed in a little butter, and then simmered in a vodka, tomato, and cream sauce. The vodka doesn’t add flavor so much as draw deep flavors from the other ingredients. As it cooks, it develops into a rich, velvety sauce that’s amazing over penne pasta.
Directions. Stir the cream into the tomato and vodka sauce. Simmer over low heat until the sauce is heated through. Stir in the Parmesan cheese until melted and well blended. Meanwhile, cook the pasta in a large pot of boiling salted water until al dente, tender but still firm to the bite, stirring occasionally, about 8 minutes.
