Tasting similar to dry shortbread cookies, these deliciously nutty Pecan Sandies with almond flour are perfect for anyone looking for an easy low carb dessert with only six ingredients. Prepare Equipment: Preheat oven to 325 F. Set aside baking half sheet lined with parchment paper.
It turns out I needed several ingredients to make these low carb pecan sandies go from good to GREAT. Almond flour, oat fiber, low carb sugar, xanthan gum, gelatin (optional), salt, baking soda, pecans, butter, vanilla and one egg white.
If you prefer pecan sandies on the drier and harder side, add an extra 1/2 ounce weight of almond flour or ground pecans to the dough. This will make firmer cookies.
Preheat oven to 375 degrees F (190 degrees C). In a large bowl, cream together the margarine, vegetable oil, 1 cup white sugar and confectioners' sugar until smooth. Beat in the eggs one at a time, then stir in the vanilla. Combine the flour, baking soda, cream of tartar and salt; stir into the creamed mixture. Mix in the pecans.
