These shortbread cookies make a festive treat for Santa Claus. In a large bowl, beat butter, 1 cup confectioners’ sugar, salt, and vanilla with a mixer at medium-high speed until creamy. Beat in flour and toffee bits just until combined (dough will be crumbly).
Dot center of each cookie with water, and top with a pecan half. Sprinkle with sanding sugar, and refrigerate for 10 minutes. Bake until lightly browned, 10 to 12 minutes. Let cool on pans for 2 minutes.
