The very definition of comfort food! Add 4 cups of broth and the box of pastina into a 3- quart pot over medium heat. Bring to a boil, stirring frequently, and boil for 6-7 minutes, until the broth is absorbed and the pastina is al dente. Remove the pot from the heat and immediately stir in the butter, egg, and Parmesan cheese.
The pastina will absorb just about all of the liquid, as seen in the picture of the saucepan above. Then it's time to stir in butter and warmed milk until creamy. You can add more or less butter or milk in line with your tastes, but for this quantity of pasta, I add one tablespoon of butter and six tablespoons of milk.
Remove the pasta off of the heat and slowly add ½ cup of the pastina to the beaten eggs while stirring until it is incorporated. Slowly mix the pastina and egg back into the pot until it is all combined. Once the egg is mixed in, stir in the parmesan cheese and black pepper. Serve the pastina with egg warm, topped with the crispy prosciutto.
Mix in the pastina and cook, stirring occasionally, until it is al dente, about 6-7 minutes. The mixture should be thickened with little to no liquid left. Remove the pot off of the heat and slowly add ½ cup of the pastina with the beaten eggs, stirring constantly.
