2. Cook the bacon to preference first and set aside. To make the sauce, whisk together all ingredients in a medium bowl until well combined. Adjust any seasonings to taste and set aside.
3. Shape your burgers. It’s important not to overwork the meat while shaping so the burgers stay juicy! I don’t like adding much more than sea salt and pepper to my burgers - a little minced garlic is an optional add-in. Shape 5 patties (1/4 lb each) so they’re about 1/4-1/2” thicker around the perimeter than the inside - this will help prevent the burgers from puffing up in the middle. Mine were about 3/4” on the outside. Sprinkle with sea salt and black pepper as you shape them.
4. The burgers can be grilled or pan-fried. Preheat your grill to high heat or skillet (or grill pan) to high heat and brush with oil. Cook for a total of 5 minutes for medium rare and 6-7 minutes for medium. The total time will depend on the exact thickness of your patties and the heat of your stovetop or grill. Use a meat thermometer to be more exact about the timing for your desired doneness.
