1. In a bowl mix onion, ginger, green chilies, curry leaves, cilantro, crushed peanuts, baking powder, turmeric powder, cumin, chili powder, salt, almond flour and eggs.
2. Mix well. Turn on deep fryer with vegetable oil (or oil of choice) and set at 350° F or heat up pot on stove top on medium with enough oil to enable deep frying.
3. Once oil is hot, scoop a spoonful of the pakora mix and drop it into the oil. Add multiple scoops of the mix at once with amount depending on size of deep fryer or pot. It should take 3-5 minutes and turn brown in color to be done. When each round is done place pakora on a plate with paper towel to absorb excess oil.
4. Serve hot with choice of keto-friendly sauce
