1. Cube chicken into 1 inch pieces. In a large pan heat 1 tablespoon of olive oil. Cook chicken for 15 minutes until browned.
2. Once cooked, remove chicken from the pan + set aside.
3. Add in remaining 1 tablespoon of olive oil to the pan. Sauté chopped onions and garlic until translucent. (Approx 5-7 minutes)
4. Add in peppers and sugar snap peas to the pan. Sauté for 4-6 minutes (until vegetables are slightly tender.. don't over do the veggies, they will continue to cook in the broth later).
