1. Rice the cauliflower. Divide the cauliflower into florets, then place ⅓ of the florets into the bowl of a food processor. Pulse 15-20 times, or until coarse rice-like grains form. Scrape the rice into a bowl and repeat with the remaining florets.
2. Heat a large deep skillet or dutch oven over medium high heat; add 1 tbsp butter and 1 tbsp olive oil until the butter melts then foams. Add the mushrooms, toss to coat in the fat, and saute, tossing occasionally. Saute until the mushrooms release their water content and are golden brown around the edges, about 15 minutes. Remove with a slotted spoon and set aside.
3. Add the 1 remaining tbsp oil and heat until it shimmers. Add the onions, toss to coat in the fat and saute, stirring occasionally, until soft, 4-5 minutes. Add garlic and cook 1 minute more.
4. Add the riced cauliflower and toss to coat in the fat with the onions. Saute the cauliflower for 2 minutes.
