The shrimp will be golden brown and crispy when ready. To pan fry the low carb coconut shrimp, pre-heat 2 inches of oil in a fry pan until it reaches 350 degrees F. Fry the shrimp for 2-3 minutes on each side or until golden brown. Remove from the pan and place on a wire rack set in a sheet tray.

While coconut shrimp can be baked or fried, we like to fry them for that extra crispiness. In this recipe, we use avocado oil for frying, but any high-temperature oil can be used. To conserve oil, we don’t use as much as someone might typically use for frying. About a 1 1/2 cm layer that covers the entire surface of the pan should be sufficient.

Place the baked coconut shrimp on a small pan that can fit in your freezer, in a single layer, and freeze until frozen solid. (You can line with pieces of parchment paper between layers if you can’t fit them onto one layer on the pan.) Then, you can transfer them to a freezer bag.
